The Epicurean Manifesto
Because I often get a crazy idea for something to try in the kitchen, be it something that I have never made before, be it something I’ve always wanted to try or be it just an old favorite, I have come up with a list of rules that I always take into consideration when preparing any kind of an epicurean delight in my kitchen:
Do’s:
- Use a recipe as a guideline.
- Look up proper preparation techniques for unfamiliar foods.
- Follow proper kitchen hygiene practices (washing hands, washing dishes, etc.).
- Follow your instincts.
- Accept advice.
- Feel free to experiment.
- Improvisational cooking is a must.
- Trial and error is necessary.
- Use power tools if necessary (food processor, mixer, etc.)
Don’ts:
- Never follow recipes exactly.
- Never prepare new dishes for friends if it is your first time making them.
- Never get discouraged.
- Never get in over your head.
- Rely on mixes and prepared sauces, etc. exclusively.
- Never declare a dish a total loss unless the food itself is burned or otherwise destroyed.
- Never serve wine in anything less than a real glass; plastic is not your friend here.
